Thai-Inspired Lettuce Wrap Salad



This Thai-style salad is light and refreshing, and it comes in crisp iceberg lettuce cups. It's great for a healthy and filling meal. This salad is a great change from regular lettuce wraps because it is full of bright flavors and textures.

Ingredients:

  • 1 head of iceberg lettuce
  • 1 pound ground chicken
  • 1/2 cup shredded carrots
  • 1/2 cup cucumber, diced
  • 1/4 cup red bell pepper, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup unsalted peanuts, chopped optional
  • Lime wedges for garnish

Instructions:

To make lettuce cups, carefully separate the iceberg lettuce leaves and wash them well

Leave to drain

Toast the ground chicken in a big skillet over medium-high heat until it's fully cooked and broken up

If you need to, drain off the extra fat

When the chicken is done, add the garlic and ginger and saut for two to three minutes, until the chicken smells good

Add the fish sauce, soy sauce, lime juice, brown sugar, and red pepper flakes and mix well

Give it two more minutes of cooking to let the flavors mix

Take the chicken mix off the heat and let it cool down a bit

Put together the lettuce wrap salad by putting a spoonful of the chicken mixture in each lettuce cup

You can put shredded carrot, diced cucumber, sliced red bell pepper, cilantro, mint leaves, and chopped peanuts on top of the lettuce cups if you want to

Serve the lettuce wrap salad with lime wedges on top to look nice
