A tasty and healthier take on traditional tater tots are these Sweet Potato Tots. They fit a variety of dietary requirements because they are Paleo and AIP-friendly. Brimming with sweet potato goodness and infused with flavorful spices, these make the ideal snack or side dish.
Ingredients:
- 2 medium sweet potatoes, peeled and grated
- 1 tablespoon coconut flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper omit for AIP
- 2 tablespoons coconut oil, melted for greasing
- Optional: chopped fresh parsley for garnish
Instructions:
Set the oven's temperature to 400F, or 200C
Grated sweet potatoes, coconut flour, onion and garlic powders, sea salt, and black pepper, if using, should all be combined in a big bowl
Blend until thoroughly blended
Form the mixture into tiny tots or cylinders with your hands, pressing down firmly to keep them together
Arrange the tots onto a parchment paper-lined baking sheet
Apply a thin layer of melted coconut oil to the tots
Bake for 20 to 25 minutes in a preheated oven, turning them over halfway through, or until they are crispy and golden brown
Take out of the oven and allow it to cool down a little before serving
If desired, garnish with freshly chopped parsley
