Ingredients:
- 2 boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 red onion, sliced
- 1 zucchini, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 4 whole wheat tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
Preheat your grill to medium-high heat
Season the chicken breasts with salt and pepper
Grill the chicken for about 6-7 minutes per side or until cooked through
Remove from the grill and let it rest for a few minutes before slicing it into strips
In a large bowl, toss the sliced red and green bell peppers, red onion, and zucchini with olive oil, salt, and pepper
Grill the vegetables until they are tender and slightly charred, about 3-4 minutes per side
Place one tortilla on the grill and sprinkle with a quarter of the shredded cheddar cheese
Add a quarter of the grilled chicken strips, grilled vegetables, and salsa on top of the cheese
Place another tortilla on top and press gently with a spatula
Grill for about 2-3 minutes per side or until the tortilla is crispy and the cheese is melted
Repeat the process with the remaining tortillas and fillings
Slice the quesadillas into wedges and serve hot
