Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup tapioca flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 4 large eggs
- 1/4 cup coconut oil, melted
- 2 tbsp honey or maple syrup for strict paleo
- 1 tsp vanilla extract
- 1 cup unsweetened almond milk
- Coconut oil or cooking spray for waffle iron
Instructions:
In a large bowl, whisk together almond flour, coconut flour, tapioca flour, baking soda, and salt
In another bowl, beat the eggs and then add melted coconut oil, honey or maple syrup, vanilla extract, and almond milk
Mix well
Pour the wet ingredients into the dry ingredients and stir until the batter is smooth
Preheat your waffle iron and grease it with coconut oil or cooking spray
Pour the waffle batter onto the preheated waffle iron, using the recommended amount for your specific waffle iron size
Close the waffle iron and cook according to the manufacturer's instructions, usually for about 4-5 minutes, or until the waffles are golden brown and crisp
Carefully remove the waffles from the iron and repeat with the remaining batter
Serve your gluten-free paleo waffles warm with your favorite toppings, such as fresh berries, sliced bananas, or a drizzle of pure maple syrup
