The Spinach and Mushroom Marinara Pasta is a quick and easy meal that tastes great and is good for you. When you mix earthy mushrooms, bright spinach, and tangy marinara sauce, you get a dish that is perfect for any occasion.
Ingredients:
- 8 oz pasta of your choice
- 2 cups marinara sauce
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: Meatballs pre-cooked, if using
Instructions:
Cook the pasta according to package instructions until al dente
Drain and set aside
In a large skillet, heat olive oil over medium heat
Add minced garlic and saut for 1-2 minutes until fragrant
Add sliced mushrooms to the skillet and cook until they start to soften, about 5 minutes
Stir in the chopped spinach and cook until wilted, about 2-3 minutes
Pour in the marinara sauce and stir to combine
If using meatballs, add them to the skillet at this point
Let the sauce simmer for 5-7 minutes to allow the flavors to meld together
Season with salt and pepper to taste
Add the cooked pasta to the skillet and toss until evenly coated with the sauce
