Ingredients:
- 1/2 cup dark chocolate chips
- 1/4 cup coconut oil
- 1/4 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 tablespoons Shiraz wine
- 2 tablespoons cocoa powder
- Pinch of salt
- Powdered sugar, for dusting optional
- Fresh berries, for garnish optional
Instructions:
Preheat your oven to 400F 200C
Grease four ramekins with coconut oil and dust with cocoa powder
In a microwave-safe bowl, melt the dark chocolate chips and coconut oil together in 30-second intervals, stirring in between, until smooth and fully melted
In a separate bowl, whisk together the granulated sugar, eggs, vanilla extract, and Shiraz wine until well combined
Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously
Add the cocoa powder and salt, and whisk until smooth and glossy
Divide the batter evenly among the prepared ramekins
Place the ramekins on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft
Remove from the oven and let cool for a few minutes
Run a knife around the edges of each pudding, then carefully invert onto serving plates
Dust with powdered sugar and garnish with fresh berries, if desired
Serve immediately and enjoy!
